Culinary Cambridge -
Our City's Role in Shaping America's Love of Fine Food

It’s a safe bet that Cambridge people and institutions helped determine what you are eating for dinner and what you’re eating it off of. Julia Child’s pioneering television show helped demystify cooking and introduced European and international flavors to the country while Design Research provided the dishes, utensils and tools on her set and redefined how Americans thought of their kitchens. These Cambridge institutions helped to create a more cosmopolitan American palate, while other local institutions were extending the city’s gastronomic boundaries.

We started at the Schlesinger library, where archivist Mark Vassar spoke about Julia Child's life and the papers she donated. We then visited the Window Shop and Design Research before speaking with one of... the Chef's at Harvest, the owner of Casablanca, and a chef at Upstairs on the Square.
